Overripe? No, just perfect for a cake!

Those bananas that are now too mushy to eat are perfect to become that treat you – or your kids – are craving right now, and the best part: sweet, but with no flour or refined sugar, this banana cake recipe is my to go alternative to overripe bananas.

Easy and quick to make, you just need this list of whole ingredients:


  • 4 eggs
  • 1 cup of oats
  • 1/2 cup desiccated coconut
  • 1 1/2 cup + of bananas
  • 1 tsp of ground cinnamon (optional)
  • 1/4 cup of honey

Blend all ingredients together and add to a small (about 8 in) greased oven proof dish. The dough will be slightly rough and runny. Slice the remaining bananas and spread on the top of the batter, sprinkle with a bit more ground cinnamon and bake at 350oF for about 30  minutes.


You can be playful with ingredients by adding other spices too such as cardamon, nutmeg and cloves.

What I like the most about this recipe, is that, besides avoiding food waste, it makes a fiber rich nutritious treat without refined sugar or flour added.  Enjoy it!
