I hear often people saying how they wish to try more variety of vegetables, but they are unsure of what to try or how to prepare it. One of my favorite vegetables are eggplants, also known as aubergines, have you ever tried it?
In addition to a delicious taste, eggplants contain vitamin C, B6, potassium and magnesium. and a good amount of fiber, that’s why it is also good to your gut health, also healping to lower LDL cholesterol.
In addition to fiber, vitamins and minerals mentioned above, eggplants also contain chlorogenic acid as an antioxidant that helps to prevent cellular damage by free radicals and lowers LDL cholesterol, protects against cancer and also works as an antiviral.
The anticancer effect of chlorogenc acid by acting as an antimutagenic, in other words, preventing cells to mutate to cancer cells, is reinforced by the effects of another substance present in eggplants called nasunin. It is also an antioxidant, found on the peel of eggplants. nasunin blocks new blood vessels to form when cancer is growing, in this manner helping to “starve” the tumor or at least slow its grow.
All these benefits to health make eggplants what we call a functional food. Let’s see how easy can be to prepare it and benefit from all these healthy effects. Bellow I describe my favorite way to season and grill it, but remember that you can be creative here and play around with your favorite spices too.
- 1 large eggplant
- 3 tbsp olive oil
- 2 tsp of ground paprika
- 1 large glove of minced garlic
- Ground sea salt to taste
- Ground black pepper to taste
Wash and slice the eggplant in about 1/4″ slices. Put the slices in a bowl and cover them with water and a bit of salt, leave it for 5 – 10 min. This step helps to remove any bitter taste from eggplants.
Mix the olive oil, paprika, garlic, salt and pepper in a small bowl, and then use a brush to cover all slices with this mixture.
Grill until it is softened and golden, and it is ready to eat. During the summer you can grill it outside on you BBQ grill, and on the cold days you can grill it on the stove. One way or the other, it is a quick way to prepare eggplants, adding health, flavor and color to your dishes.
