Cauliflower Pizza Crust

Another Meatless Monday! How about some pizza for dinner? Crispy dough, light and packed with nutrients? Versatile, you can choose any toppings you like. Among my favorites, are eggplants, red onions and olives…. absolutely delicious!

Cauliflower Pizza Crust

Ingredients:
1 cup raw cauliflower
1 pack of grated cheese
1 tbsp parley
1 tbsp oregano
1 egg (or two egg whites)
Olive oil (to grease)

Topping suggestion:
1/2 cup of tomato sauce
200g mozzarella cheese
1 tomato diced
1 red onion chopped
Olives
Olive oil

Pre heat the oven at 230C/425F
Grate raw cauliflower
Mix all ingredients until make a dough
Grease the pizza tray with olive oil
Distribute the dough equally on the pizza tray
Bake for 15 – 20 min until golden
If it is a gas oven, might be necessary to turn the dough upside down to bake the other side and bake for another 5 min
Remove from oven, cover with tomato sauce and your favorite toppings, put back in oven and bake for 5 minutes’
